"Best Vegan Lasagna"
This vegan lasagna recipe is a delicious and healthy twist on the classic Italian dish. - 12 lasagna noodles
- 4 cups vegan marinara sauce
- 2 cups vegan ricotta cheese
- 2 cups vegan mozzarella cheese, shredded
- 1/2 cup vegan parmesan cheese, grated
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh parsley leaves, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 pound (454 g) plant-based ground meat
Instructions:
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions until al dente, then rinse with cold water and set aside.
- In a mixing bowl, combine the vegan ricotta cheese, vegan mozzarella cheese, vegan parmesan cheese, fresh basil, fresh parsley, salt, and pepper.
- In a separate pan, cook the plant-based ground meat according to package instructions until browned and fully cooked.
- Grease a 9x13 inch baking dish with olive oil and spread a thin layer of marinara sauce on the bottom of the dish.
- Place a layer of cooked lasagna noodles on top of the sauce, then spread a layer of the cheese mixture over the noodles. Add a layer of plant-based ground meat on top of the cheese mixture. Repeat the layers until all ingredients are used up, making sure the final layer is cheese.
- Top the lasagna with the remaining marinara sauce, and sprinkle with additional vegan mozzarella and parmesan cheese, if desired.
- Cover the baking dish with foil and bake for 30 minutes. Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Let the lasagna cool for 10-15 minutes before slicing and serving.
