"Best Vegan Lasagna"

This vegan lasagna recipe is a delicious and healthy twist on the classic Italian dish. Ingredients:

  • 12 lasagna noodles
  • 4 cups vegan marinara sauce
  • 2 cups vegan ricotta cheese
  • 2 cups vegan mozzarella cheese, shredded
  • 1/2 cup vegan parmesan cheese, grated
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley leaves, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 pound (454 g) plant-based ground meat

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente, then rinse with cold water and set aside.
  3. In a mixing bowl, combine the vegan ricotta cheese, vegan mozzarella cheese, vegan parmesan cheese, fresh basil, fresh parsley, salt, and pepper.
  4. In a separate pan, cook the plant-based ground meat according to package instructions until browned and fully cooked.
  5. Grease a 9x13 inch baking dish with olive oil and spread a thin layer of marinara sauce on the bottom of the dish.
  6. Place a layer of cooked lasagna noodles on top of the sauce, then spread a layer of the cheese mixture over the noodles. Add a layer of plant-based ground meat on top of the cheese mixture. Repeat the layers until all ingredients are used up, making sure the final layer is cheese.
  7. Top the lasagna with the remaining marinara sauce, and sprinkle with additional vegan mozzarella and parmesan cheese, if desired.
  8. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  9. Let the lasagna cool for 10-15 minutes before slicing and serving.
